The greatest sandwich I’ve ever consumed came from a little roadside cart. You’d almost miss it if you didn’t know to stop. It was hiding down a side road, parked in a dirt lot. Just waiting to be discovered. Thus began my love of the Philly Cheesesteak Sandwich. This recipe heightened my affection for perfectly succulent strips of steak swimming together with sweet caramelized onions and rich sautéed mushrooms because it’s all stuffed into a gorgeous pepper sandwiched between two gloriously melted pieces of provolone. (food happiness – sigh)
My Philly Cheesesteak Stuffed Peppers are a great weeknight dinner.You can use deli roast beef instead of sirloin steak to make them even faster to the table. They are a fantastic way to get some veggies onto your plate. I mean, what better way to eat some green than stuffed with meat and cheese? Pile these peppers high with all that goodness. Roast it in the oven until they’re melty and piping hot. Mmmmmmmm.
